New Recipes

I’ve been in a dinner rut lately. Eating the same things over and over and over again. So, this week I decided to try a couple of new recipes from pinterest. Here are two of the best-

 

Stuffed Bell Peppers

(got this recipe here)

Ingredients:

1 medium onion, chopped

16 oz lean ground turkey or chicken

4 garlic cloves, minced

1 T chili powder (decrease to 1/2 T if you don't like spicy food)

1 T ground cumin

16 oz jar salsa (any flavor, but make it something you like.)

1 cup cooked rice

1 cup shredded low-fat cheddar cheese

2 cups baby spinach

sour cream

avocado

Directions:

1. Heat oven to 350. Cut three large bell peppers in half and remove seeds.

2. In a large skillet over medium heat, brown turkey with onions. Add minced garlic, chili powder and cumin and stir and cook 1 minute. Stir in salsa and rice.

3. Place cut bell peppers on a cookie sheet and divide turkey mixture evenly among them. Top with cheddar cheese and bake for 7.

4. Serve with sour cream, avocado and spinach on top.

Roasted Broccoli

(Found this one here)

Now, it’s easy. Put the broccoli on a cookie sheet. Toss with olive oil, salt and pepper. (She says 5 Tbs olive oil, 1 1/2 tsps kosher salt, 1/2 tsp fresh ground pepper, but I just eyeballed it.) Now add 4 garlic cloves that are peeled and sliced and toss them in too.

Roast in the oven 20 to 25 minutes, until “crisp-tender and the tips of some of the florets are browned.”

I shook the pan around a bit as it went, but not sure that’s necessary.

When it’s done, take it out of the oven–and here’s where it gets really good–zest a lemon over the broccoli, squeeze the lemon juice over the broccoli, add 1.5 Tbs more olive oil, 3 Tbs toasted pine nuts (I left those out), and 1/3 cup of freshly grated Parmesan cheese. She also has you add 2 Tbs julienned fresh basil, but I left that out too.

*This is by far the best way I’ve ever had broccoli- very yummy!
